One of France's most celebrated pink wines, period. Thibaud Boudignon — Bordeaux-born, Burgundy-trained, now a biodynamic Loire Chenin specialist in Anjou — treats his rosé with the same fanatical attention he gives his whites. The 2025 is roughly 90% Cabernet Franc with 10% Grolleau, direct-pressed from biodynamic vines on schist and clay, fermented with native yeasts in stainless steel. He blocks malolactic to keep the acidity electric and bottles a rosé that drinks like a serious dry white. The result is bright pink in the glass, explosive with crunchy red fruits, and built on a savory mid-palate tension that cascades to a bone-dry, mineral-driven finish. Rosé for people who don't normally drink rosé.
