This cooperative was founded in 1946 by approximately 20 growers in Chavot-Courcourt, at the confluence of the northern Côte des Blancs and eastern Vallée de la Marne. "Chavost" is the ancestral name of the village. Today, more than 100 vignerons contribute to over 70 hectares. In 2019, oenologist Fabian Daviaux took over and transformed the cooperative. Organic farming began in 2016, with certification achieved in 2023. Blanc d'Assemblage is 50% Chardonnay and 50% Meunier from clay-limestone soils, vinified 70% in steel and 30% in barrels, with no sulfites added, no dosage, and only cuvée juice used.

Champagne Chavost is the rebel formula: no commercial yeasts, no sulfites added at bottling, no filtration, zero dosage. Fabian Daviaux runs this small cooperative in Vallée de la Marne and lets the Chardonnay, Pinot Noir, and Pinot Meunier speak for themselves through spontaneous fermentation with indigenous yeast. Lean, tense, alive. These are Champagnes for people who believe in the power of doing less.
