Provence's culty superstar, still barely known in America outside a small legion of hardcore fans: Chateau Simone covers nearly the entire tiny Palette appellation, which the family helped establish back in 1948. The vines grow on a north-facing slope of limestone-rich soil just south of Aix-en-Provence - exposure and terroir that give the reds freshness and structure despite Provence's heat. This Palette Rouge, a blend led by Grenache, Mourvedre and Cinsault, is the kind of tenacious-but-elegant wine that ages spectacularly and shines with food. The 2011 should be in a fine mature window now, complex and savory. A true insider's bottle.

Jean-François Rougier is the seventh generation stewarding this Provençal jewel, one of the world's rarest appellations. Château Simone holds a near-monopoly on Palette, a microclimate just south of Aix-en-Provence where Grenache, Mourvèdre, and Cinsault have grown for centuries. The wines are beloved across top French restaurants yet virtually unknown in America. Therein lies the discovery.
