Natural wine pioneers from the Loire. The Puzelat family name appears in 15th-century documents from Les Montils; the lieu-dit "le Tue-Boeuf" has been documented since the Middle Ages. Thierry and Jean-Marie Puzelat took full control in 1994 and helped launch the natural wine movement from Paris in the mid-1990s. Jean-Marie retired after 2018; Thierry continues with daughters Zoé and Louise. Rouillon is 50% Pinot Noir (planted 1991), 50% Gamay (planted 1996) from 1.9 hectares of clay-limestone with a reddish tint. Organic since 1996, semi-carbonic maceration, no added sulfur in fermentation.

Jean-Marie and Thierry Puzelat were making natural wine in the Loire when most people thought they were crazy. Since the early 1990s, Clos du Tue-Boeuf has been the blueprint for thoughtful low-intervention winemaking—bright, alive, sometimes unpredictable, always honest. Ten hectares in Les Montils (Cheverny) plus four rented hectares in nearby Touraine. The wines are about the fruit and the year, not the winemaker's vision. Not trendy. Just really, really good.

What Bowler Wine has to say about this wine:

50% Pinot Noir/50% Gamay. Named Rouillon or "rusty" for the reddish tint of its clay-limestone soils, this 1.9-hectare estate vineyard is made up of two parcels, one of Pinot Noir planted in 1991 and one of Gamay planted in 1996. The Puzelats farm it organically and harvest it by hand. As is typical of Tue Boeuf reds, the whole clusters go through a semi-carbonic maceration and spontaneous fermentation with native yeasts and without sulfur in vat. Rouillon is aged for 6 months in used demi-muids. It is bottled without filtration and with little to no sulfur, depending on the vintage. Rouillon is classified as AOC Cheverny.
