One of Chateauneuf-du-Pape's great traditionalists, Domaine Charvin makes its wine the old way: no destemming, no new oak, just old-vine Grenache raised entirely in concrete. Laurent Charvin farms organically on the sandy clay and galets roules in the cool northern reaches of the appellation, and the result is a Chateauneuf built on perfume and finesse rather than weight. This is a back-vintage bottle from a private collection, now well into its mature stride. Around fifteen years on, expect the primary fruit to have given way to the savory, earthy, dried-herb side of southern Rhone Grenache. Drink it now alongside something hearty.

Laurent Charvin represents the sixth generation of his family's Châteauneuf-du-Pape estate, and he's done something radical: converted all 28 hectares to organic. Whole-cluster fermentation goes into concrete tanks instead of barrels, letting the fruit speak without oak interference. This is Châteauneuf for people who want generosity without excess.
