Fortified in 2001, then left alone for years. Maury is a vin doux naturel from the rugged Agly Valley in Roussillon: fermentation is halted partway by adding neutral grape spirit, which locks in the grape's natural sweetness and lifts the alcohol. The Hors d'Age designation means the wine then spent an extended stretch aging in barrel, slowly picking up the nutty, dried-fruit, gently oxidative character the French call rancio. Domaine du Dernier Bastion is a small Maury producer, and this is made in tiny quantity. Serve it lightly chilled after dinner, and don't feel obliged to finish the bottle in one sitting: once open, a wine like this holds for weeks.
