Jean-Marie Fourrier learned at the elbow of the legendary Henri Jayer, and he's spent his career chasing one thing above all: pure, living fruit. Here that means vines planted back in 1928, farmed in one of Gevrey's coolest, highest sites — a notch in the hillside where cold air pours down and keeps the fruit taut and fresh. His cellar work is famously hands-off: no fining, no filtration, barely any new oak, and almost no sulfur, relying instead on a little natural carbonation in the wine to keep it lively. The result is Gevrey with tension and perfume rather than muscle, built for the long haul. A young 2023 that rewards patience — or a good long decant.

"The 2023 Gevrey-Chambertin Combe Aux Moines 1er Cru has a nicely detailed bouquet with a mixture of finely delineated raspberry, wild strawberry, blackcurrant, damp loam and light tobacco scents. The palate is medium-bodied with light tannins. It's perhaps the fleshiest of Fourrier's Premier Crus with a dash of white pepper on the finish.
