New Zealand Riesling made with the patience of a German estate: the fruit ferments long and slow in stainless steel so nothing gets in the way of the fruit. The site itself does half the work — block 5 catches the better angle to the sun and pushes toward tropical fruit, while block 6 runs perpendicular, east/west, shading the bunches and holding onto tension. That push and pull is the house signature here: purity, transparency, and a balance held between acidity, sugar and texture rather than resolved in favour of any one of them. Dry River was founded by Dr Neil McCallum, who planted in what was then virgin ground in Martinborough at a time when, as he tells it, hardly anyone in New Zealand cared about good wine — he calls the decision reckless. Wilco Lam makes the wines now, chasing acidity and relatively low alcohol with fully ripe phenolics, and in 2019 the estate marked forty years since its first plantings. The producer suggests it will cellar up to a decade, which for a Riesling of this precision feels conservative.

"Dry River tends to pick its two very-low-yielding Riesling sites early, which accounts for the rather modest 11.5% alcohol despite fermenting until it's almost dry (just 4g/L of residual sugar remains). Fermented in stainless steel, this is all about fruit purity and delicacy: expect florals, clementines and lemons. "The lime and peach-scented 2019 Craighall Vineyard Riesling is delicately perfumed and nearly floral on the nose, then adds plenty of ripe apple fruit on the palate. It's light to medium-bodied, weighing in at 11.5% alcohol and approximately seven grams per liter of residual sugar, with a slightly creamy texture and hints of citrus pith on the lingering finish. Perfect Pairings

The producer's own suggestions: white fish ceviche, grilled salmon, barbecued chicken. Also very good with Thai green papaya salad, pork banh mi, crab cakes with lime, or a plate of prosciutto and melon.

Tasting Profile

Dry to just-off-dry in style, citrus and orchard fruit alongside riper tropical notes from the sunnier block. Driven by bright, firm acidity, with real texture underneath it rather than just bones. Long, clean, mineral finish. Serve cool but not ice-cold, 8–12°C, as the producer advises.
