Eduardo Torres Acosta is a young winemaker from Tenerife who moved to Sicily in 2012, drawn by parallels between Etna and his native Canary Islands—both volcanic terroirs. After working at Arianna Occhipinti and Passopisciaro, he vinified his first vintage in 2014, eventually converting a small Etna garage into his winery in 2018. "Versante Est" refers to the eastern slope of Mount Etna, from three parcels averaging 80 years old at 750-900 meters on sandy volcanic ash. Predominantly Carricante with small amounts of local varieties, hand-harvested and spontaneously fermented in concrete without temperature control. Two-day skin maceration, aged in concrete and old oak. Creamy and saline with clean volcanic minerality. Ideal with seafood.

"The first of the two white wines, the 2024 Versante Nord is a blend of varieties sourced from six different vineyards at varying altitudes from the north side of the valley, which receives more sunlight during the day. This wine offers a wealth of power, with notes of salted pineapples, fresh sage, smoky earth, and saline. It’s bright with acidity, salinity, and a light wild side, though very well-managed. It had been bottled just three weeks earlier, so this tasting was a preview prior to its release. Drink over the coming 8-10 years."

What Bowler Wine has to say about this wine:

90% Carricante/10% other local varieties. From from three parcels of bush-trained vines over 80 years old on the east face or versante est of Mt. Etna. The farming is organic and all work and harvest by hand. The soils are sandy volcanic ash and the elevation ranges from 750 to 900 meters. The bunches are destemmed and fermented spontaneously with native yeasts and without sulfur in concrete without temperature control. Maceration lasts for 2 days. The wine is aged for 10 months in tonneaux and then bottled without fining or filtration and with a tiny amount of sulfur.
