Eric Rodez, Champagne Ambonnay Brut Empreinte Blanche, 2012

One year, one grape, one village, and nowhere to hide. Empreinte de Terroir is all Chardonnay from the 2012 harvest in Ambonnay, drawn from Grand Cru parcels including Le Moulin, Les Tourets and Les Beurys, where the vines averaged 30 years old. Rodez is a grower who worked at Krug and in Burgundy before taking over in 1984. He farms organically and biodynamically, and for this wine he fermented in small oak barrels and skipped malolactic fermentation, cold stabilisation and filtration. Dosage is just 2 g/l, so you're tasting Ambonnay and the year rather than sugar. It went into bottle in spring 2013, so it now has more than a decade of age, which makes it a rare chance to taste a mature grower Champagne from a top village. If you know Rodez through his blends, this is the same place without the makeup.

Tasting Notes & Food Pairings

Perfect Pairings

Roast chicken with morel cream sauce; seared duck breast with cherries; wild mushroom risotto; aged Comté or Gruyère gougères; pan-roasted turbot with brown butter.

Tasting Profile

Expect the depth of Grand Cru Ambonnay Pinot Noir: red apple, red berries and brioche, with barrel fermentation adding nutty richness to a full, vinous body and fine mousse. Skipping malolactic keeps the acidity bright and taut, and the very low dosage gives a dry, chalky finish. With age, honeyed, savoury notes typically emerge.

Champagne

Champagne boasts some of the world’s greatest luxury brands with Krug, Cristal and, of course, Dom Perignon. But it’s also home to hundreds of small dynamic producers—farmers who grow their own grapes (often organically) and make (often with natural methods) tiny amounts of pure and absolutely delicious wine that reflect the individual personalities of their villages and terroirs. Toast with these wines, for sure. But also treat them like the great wines they are: taste, drink, explore!
