A Krug-trained winemaker making a rosé that refuses to blend: one Ambonnay Grand Cru vineyard, one vintage, and Pinot Noir that takes its color from its own skins. Les Beurys is Eric Rodez's single-vineyard project, meant to show one parcel's terroir with nothing blended in. The site is four plots facing east, with about 35 cm of soil over the chalk. As a rule, Rodez makes Les Beurys in small oak barrels, with no malolactic fermentation, no industrial cold stabilization and no filtration. In 2017 he made Les Beurys both ways, as a Blanc de Noirs and as this rosé. Rodez farms organically and biodynamically. This is a rosé to take seriously at the dinner table.

More about Eric Rodez

The eighth generation of Champagne growers in Ambonnay, Eric Rodez trained at the legendary Krug house and brought that same precision to his family's biodynamic vineyard. His champagnes are proof that grower Champagne can stand with any house wine—elegant, mineral-driven, and entirely natural in their expression of the terroir.

Tasting Notes & Food Pairings

Perfect Pairings

Seared duck breast with cherry sauce; roast quail or squab; grilled salmon with crisp skin; jamón ibérico; pork rillettes on toasted country bread; mushroom and Gruyère tart.

Tasting Profile

Expect a deeper-coloured, more vinous rosé than most Champagnes: red cherry, wild strawberry and raspberry, with a savoury, gently spicy edge from small oak barrels. Without malolactic, acidity typically stays bright and taut against a fuller body and light tannic grip, finishing dry, chalky and long. Think red Burgundy with bubbles more than an aperitif pink.

Champagne

Champagne boasts some of the world’s greatest luxury brands with Krug, Cristal and, of course, Dom Perignon. But it’s also home to hundreds of small dynamic producers—farmers who grow their own grapes (often organically) and make (often with natural methods) tiny amounts of pure and absolutely delicious wine that reflect the individual personalities of their villages and terroirs. Toast with these wines, for sure. But also treat them like the great wines they are: taste, drink, explore!
