Fourth-generation grower Champagne from Ambonnay—one of only a few villages rated 100% Grand Cru. Laetitia Billiot took over in 2011, continuing the family legacy since 1696. Just 5 hectares with 18 elite parcels, 75% Pinot Noir from the rare Petit Pinot d'Aÿ clone known for tiny berries and naturally higher acidity. Aged minimum 2 years on lees. Deep golden hue, toasty complexity with fresh pear and lime blossom evolving to characteristic Pinot Noir vinosity.

Laetitia Billiot runs the fourth-generation show in Ambonnay, and her great-grandfather Louis set a standard she's not about to drop. Eighteen parcels of pristine mid-slope vines (seventy-five percent Pinot Noir) ferment in stainless steel with blocked malolactic, keeping these Champagnes racing with nervy acidity and age-ability that's no joke.
