A white Burgundy of remarkable finesse from a 0.93-hectare south-southeast-facing vineyard on heavy clay soil. Domaine Hubert Lamy practices organic viticulture and employs minimal intervention winemaking—ambient fermentation, 24 months aging in mostly used 300-600L barrels. The wine displays a yellow-green robe and subtle nose of fresh yellow fruits. The structure balances mature richness with underlying freshness and mineral character, a hallmark of this estate's meticulous approach.

Olivier Lamy took over this Saint-Aubin estate in the 1990s and transformed it from solid to legendary. Nineteen hectares of Côte de Beaune terroir (two-thirds Chardonnay) worked with obsessive attention and lutte raisonnée.
