A single paraje bottling from barely six-tenths of a hectare of old Garnacha at 1,070 meters, in a northeast-facing amphitheater ringed by chestnut and oak trees near Las Herguijuelas. That cool exposure and the surrounding forest are the whole point: they slow ripening in a hot part of Spain, which is why the wine comes out delicate and almost wispy in texture yet explosive on the palate. The granite here is poor and rocky, the vines are dry-farmed and organically worked, and everything is fermented with native yeasts — Bárbara Requejo, who trained at Haut-Brion, Pierre Peters and Peay before founding Las Pedreras with Guzmán Sánchez in 2020, keeps no fixed protocol and adjusts whole-cluster use vintage by vintage. Total production across the whole estate runs to roughly 20,000-25,000 bottles from just over three hectares, so a parcel this small yields very little. This is the most detailed and site-specific wine in the range, and it rewards a large glass.
