Domaine du Coulet's wines are crafted from fruit farmed organically, with the help of horses and mules or entirely by hand. As steward of over one-sixth of the Cornas appellation, Matthieu feels responsible for nurturing his ecosystem—installing water features for wildlife, protecting surrounding grasslands and forests—all of which lower yields in the process.

Brise Cailloux is his snapshot of Cornas terroir: harvested from about 50 east-facing, mostly terraced parcels of decomposed granite, averaging 50-year-old vines from across his 20 hecatres. Grapes ferment in stainless steel and age in concrete eggs for a year, then are lightly filtered with a dash of sulfur added before bottling.

So pure you could drink it through a straw. Meaty, with voracious violet floral notes, juicy plums, and a core of iron and granitic minerality. This is as soif as Cornas gets—poise imparted by a master craftsman.
