Maximus draws from Carmarans's vineyard conservatory in Marcillac, a patchwork of old-vine parcels on granitic soil at 450 meters elevation. Whole-bunch maceration for one week, gentle pressing, and aging in old barrels create a wine with red fruit and earthy notes, pink pepper undertones, and a full structure that speaks to the vineyard's altitude and singular terroir.
