Maximus draws from Carmarans's vineyard conservatory in Marcillac, a patchwork of old-vine parcels on granitic soil at 450 meters elevation. Whole-bunch maceration for one week, gentle pressing, and aging in old barrels create a wine with red fruit and earthy notes, pink pepper undertones, and a full structure that speaks to the vineyard's altitude and singular terroir.

Fer Servadou is one of France’s most elusive grapes, grown exclusively in the southwestern corner of the country. It goes by several alibis: Braucol in Gaillac and Pinenc in Madiran. But no one — and we mean no one — is making Fer Servadou like Nicolas Carmarans.

For a long time, Carmarans ran a natural wine bar in Paris; like a lot of wine professionals, he decided to try his hand at making wine, not just slinging it. And so he moved south, to a small village in the department of Avéyron where his great-grandfather made wine. He dabbled in winemaking for a few years until he was able to purchase enough vineyard land to pursue it full-time.

Avéyron lies 40 or so miles inland from the Mediterranean, and you could be forgiven for thinking that Carmarans’ wines might be heavy or inky, but they’re actually exactly the opposite. These wines are silky and featherweight, with tons of supple red and pink fruit flavors and a juicy, thirst-quenching structure.
