Pascal Cotat is the Loire producer who convinced Sancerre that single vineyards mattered. Before him, this appellation sold blends. He pioneered small-lot, terroir-focused Sancerre from a 2.3-hectare estate that yields just 18,000 bottles annually across all cuvées. This is La Grande Côte: clay-rich soils on a steep, north-facing slope, where old vines burrow deep. Indigenous yeasts, whole bunches pressed, barrel fermented in older demi-muids, bottled unfined and unfiltered—it's winemaking as restraint, not interference. The result is lush, supple, alive.
