In the Aube — Champagne's southern outpost of Kimmeridgian limestone, closer to Chablis than to Reims — the Gerbais family has spent four generations championing single parcels and rare grapes. "Champ Viole" is their pure Chardonnay Blanc de Blancs, named for the violets that bloom in a plot planted around 1989, and vinified with a low-intervention hand: indigenous yeasts, minimal dosage, extended time on the lees. Now led by Aurelien Gerbais, this is grower Champagne in its most transparent form, expressing a specific patch of clay-limestone rather than a house style. Extra Brut and bone-dry, it trades toasty richness for cut and clarity. A pointed, mineral aperitif from one of the Aube's most thoughtful estates.

"Based on the 2020 vintage and complemented with 50% reserve wines from a perpetual reserve spanning 2011–2019, Gerbais’s NV Extra-Brut Champ Viole is sourced from a south-facing mid-slope parcel of 50-year-old Chardonnay vines. The bouquet reveals aromas of pear, brioche, lime and white flowers, mingling with grapefruit zest. Medium- to full-bodied and fleshy, it carries a rich, enveloping core of fruit enlivened by vibrant acidity, concluding with a long, enveloping finish. Disgorged in October 2024 with two grams per liter dosage, the depth of reserves tempers the youthful character of the 2020 base vintage." —Kristaps Karklins
