"Whole-cluster pressed, with each press run of approximately 122 gallons going into two neutral barrels, where they ferment with ambient yeasts. Malolactic conversion is blocked. The wines age in barrel sur lie for 6–8 months before being blended and then bottled for tirage, where they spend between 40 and 48 months on the lees. Dosage 2 g/l. Fine bubbles. Smells of wet chalkboard, kelp and greengage plum. In the mouth, wonderfully salty green apple and greengage plum mix with white flowers. Velvety mousse, with great acidity and chalky minerality. Fantastic balance."
