Chalk tells stories. Vincent Cuillier's No.2 Blanc de Blancs from the Montagne de Reims writes one in pure Chardonnay. This is the terroir-specific expression you've been searching for—100% Chardonnay from the region historically celebrated for its elegant whites. South-facing exposures at higher elevation ensure that natural acidity remains sharp and bright. The Extra Brut dosage (minimal residual sugar) allows the wine's mineral voice to sing unencumbered. Three years aging sur lattes, hand disgorged, unfined and unfiltered. The result is a Blanc de Blancs of remarkable delicacy: think white flowers, lemon zest, oyster shell minerality. This wine embodies the elegance that chalk can express when left to its own devices. For those who understand that refinement isn't about power, but about precision.

Antonio Galloni

92 points

"The 2021 Extra Brut Blanc de Blancs Montagne de Reims No. 2, from vines in Villers-Marmery, is bright and very nicely sculpted. Lemon peel, white flowers, dried herbs, chalk and white pepper all race out of the glass. This Blanc de Blancs really sizzles with tension and salivating energy. The No.2 is the only wine in the range that incorporates some purchased fruit. Bottled with no dosage. Disgorged: March 2025; multiple disgorgements throughout the year." —Antonio Galloni

Tasting Notes & Food Pairings

Perfect Pairings

Pair with delicate white fish (sole, flounder), oysters, or spring vegetables like asparagus. The wine's mineral acidity and restraint complement refined seafood preparations and light cream sauces beautifully.

Champagne

Champagne boasts some of the world’s greatest luxury brands with Krug, Cristal and, of course, Dom Perignon. But it’s also home to hundreds of small dynamic producers—farmers who grow their own grapes (often organically) and make (often with natural methods) tiny amounts of pure and absolutely delicious wine that reflect the individual personalities of their villages and terroirs. Toast with these wines, for sure. But also treat them like the great wines they are: taste, drink, explore!
