Barbichette is a small natural-wine project on Seneca Lake in the Finger Lakes, run by Louisiane Remy and Cesar Vega, who farm organically and work hands-off: no added sulfites, no commercial yeast, no filtration. Pompette is a direct-press rose of Pinot Noir, all bright and breezy, with grapefruit, bitter orange, and a savory snap of strawberry leaf. It's a New York summer in a glass: pale, dry, and refreshing. Get it cold and drink it on a porch.

Their approach favors natural fermentation and minimal intervention, creating wines that reflect both the place and the hands that made them. Barbichette's pét-nats and still wines are honest, expressive bottles that prove you don't need decades of history to make something worth drinking.
