Benoit Courault practiced biodynamics and horse-plowing before most people knew what those words meant. After three years at Domaine de L'Anglore in Tavel, he bought a 6-hectare estate in Faye d'Anjou with his wife and committed to biodynamic farming on schist soil. His La Grande Maille—old-vine Cabernet Franc—ferments naturally and ages in barrel without racking. It's Loire wildness, properly handled.
