Les Vignes de Germinon comes from a single northeast-facing parcel in Chouilly Grand Cru, massal-selection Chardonnay planted in 1964 on a deep 1.2 meters of brown clay over the famous Cote des Blancs chalk. The cooler aspect and richer soil profile push the wine toward a textural, generous Chouilly expression rather than the cut you get from Oger or Mesnil. Quentin and Marine Vincey farm biodynamically, ferment ambient in barrel (20% new local oak), put the wine through full malo, age 36 months on the lees and disgorge with zero dosage and no added sulfur. A Chouilly that earns its Grand Cru pedigree with depth and chalk in equal measure.

Perfect Pairings

Pour with seared scallops in lemon-butter, roast turbot, brandade, or a creamy mushroom risotto. Also lovely with a board of aged Alpine cheeses.

Tasting Profile

Lemon balm, white peach, anise and toasted hazelnut over a chalky core. Medium-plus body, juicy acidity, fine mousse, with a long saline-mineral finish.
