Chassagne premier cru from vines planted in the late 1940s, now with a decade in bottle behind it — the point where white Burgundy of this quality stops being about primary fruit and starts being about texture and depth. Les Vergers sits mid-slope immediately above Les Chenevottes and Les Macherelles, flanking them both, and Jean-Marc Pillot farms just half a hectare there; it is always a standout in his lineup, with a lemon-lime and quinine nose and a minerality that does not sit apart from the fruit so much as fuse with it. Pillot, the fourth generation of his branch of the family in Chassagne, has pushed the domaine into the village's top rank: plowed vineyards, no herbicides, dense planting at 12,000 vines per hectare in the premier crus, hand harvest, then barrel fermentation with a restrained 10–30% new oak, twelve months on the fine lees and six more settling in tank. 2016 was the year of the catastrophic late-April frost, which cost some Chassagne growers well over half their crop; what survived ripened on unburdened vines and made concentrated, classically proportioned whites in tiny quantity. This bottle comes from a private cellar rather than the domaine, and it is drinking beautifully now — open it an hour ahead or decant.

"Pale, bright yellow. Incredibly sappy aromas of lemon, lime, white peach, orange zest and crushed stone, accented by a note of rhubarb. At once powerful, densely packed and refined, conveying outstanding inner-mouth energy and precision without any impression of weight. Not a monster of opulence; in fact, the dominant impression here is of penetration and thrust, with the citrus and mineral flavors showing lovely purity and floral lift and building inexorably on the long aftertaste. As Pillot often says, this wine is barely at the starting block today. Its 2017 sibling may be fleshier but this wonderfully pure wine is actually a bit higher in octane (13.1%, vs. 12.9%). This is the first vintage that includes the young vines that Pillot replanted in 2003; the other half of the vines in this clos are 100 years old." —Stephen Tanzer

Burgundy, ancient and revered as it is, has been one of the most dynamic exciting regions in the world over the last ten years. In the 1990s and earlier there was only a small handful of producers that you could count on. Those producers -- we're talking Armand Rousseau, Coche-Dury and the like -- are now out of reach for most of us. Back then, Burgundy went through an uneven period when many red wines were made with too much new oak and extraction, and many white wines were made to taste good on release but without the classic staying power in the cellar. But at some point in the second half of the last decade, things really turned around. Great new producers emerged and lots of existing producers upped their game and started making much better wines. In this latter, "most improved" category, we put Jean-Marc Pillot at the every top. Pillot is blessed with some of the finest vineyard sites in Chassagne Montrachet. But like most producers, as recently as 10-12 years ago he used too much "battonage" (basically stirring up the lees in the vat). This added richness to the wine but has also been associated with premature oxidation. At some point along the way, he had an epiphany: he stopped with the battonage and started to make wines in the "reductive" (i.e., not oxidative) style associated with Jean-Marc Roulot. And it worked. The improvement in quality has been more dramatic here than almost anywhere else in Burgundy. The consistency is incredible and there have been none of the issues with premature oxidation that others have continued to experience as recently as 2008 and 2010. They are still rich and wonderful examples of Chardonnay, with a little more generosity than you get in Roulot's wines. But now they have more chisel, more crystalline qualities, more terroir expression. And they age beautifully!
