Gerbais colors their rose the Champenois way, by adding still red wine, except the red is their own. Grains de Celles Rose is built on the same base as the flagship, roughly 55% Pinot Noir, 22.5% Chardonnay and 22.5% Pinot Blanc, with about a tenth of the blend coming from the estate's Coteaux Champenois Rouge, the still Pinot Noir they make in Celles-sur-Ource. Aurelien Gerbais farms fifteen hectares here in the Cote des Bar, on Kimmeridgian limestone that has more in common with Chablis than with the Marne, and he keeps an unusually high share of the near-forgotten Aube Pinot Blanc alongside the classic grapes. Since 2018 this has been a single-vintage cuvee with no reserve wine, so the bottle is all 2022; it rests more than thirty months on lattes and is finished at 3 g/L extra brut. The result is one of the most gastronomic rose Champagnes around: savory, lifted, never confected, never sweet.

Champagne

Champagne boasts some of the world’s greatest luxury brands with Krug, Cristal and, of course, Dom Perignon. But it’s also home to hundreds of small dynamic producersβ€”farmers who grow their own grapes (often organically) and make (often with natural methods) tiny amounts of pure and absolutely delicious wine that reflect the individual personalities of their villages and terroirs. Toast with these wines, for sure. But also treat them like the great wines they are: taste, drink, explore!
