Grower Champagne made by Fabrice Pouillon, a third-generation vigneron working organically (horse plowing and all) out of the Premier Cru village of Mareuil-sur-Ay. This is a rose made by maceration, meaning the color and flavor come from soaking red grapes rather than blending in still red wine, which gives it more depth, grip, and red-fruit presence than most pink Champagne. Built on the 2021 harvest from old vines in the Vallee de la Marne, it's structured and gastronomic, an Extra Brut with a whisper of dosage. A rose for the dinner table, not just the toast.
