Unaged corn whisky pitched with fresh local strawberry and rhubarb juice and a bit of spice, which is a very different thing from a candy-flavored moonshine. Still Fired Distilleries works out of the Lequille Country Store just outside Annapolis Royal, Nova Scotia, on hand-built pot stills; they call the original one Kirby and say it was the first legal still built in the province. The fruit is juiced to a set ratio before it meets the clear corn spirit, so the strawberry and rhubarb read as actual fruit, tart as much as sweet. Serve it cold: over ice, lengthened with soda water and a squeeze of lemon, stirred into lemonade, or poured into a summer sangria.

Two former commercial divers, a family country store and what they bill as the first legal stills built in Nova Scotia: Still Fired is about as handmade as craft distilling gets.

Owen Ritchie and Andrew Cameron met working as commercial divers for the same Halifax company. In 2015 they opened Still Fired Distilleries in the Lequille Country Store outside Annapolis Royal, which Owen's family has owned for generations. It sits within half a mile of the Bay of Fundy. Their two stills, Kirby and Morgan, were built with the help of a welder friend. They work in small batches and use local ingredients wherever they can.

The Bay of Fundy Gin starts from a corn spirit and adds eight local botanicals, including hand-picked, sun-dried dulse seaweed, and the vapor passes over Bay of Fundy beach stones during distillation, so expect a briny, coastal edge. The moonshines started with Owen's grandmother's prize-winning apple pie recipe and now include versions such as strawberry rhubarb, made from clear corn spirit and real fruit.

Tasting Profile

Ripe strawberry and tart rhubarb over a clean, unaged corn-whisky base with a light spice note; fruit-forward but not syrupy, with a bright, tangy finish.
