Fass 4 got its name in the most democratic way possible: at a cellar tasting held by Bernhard Ott's father, Eduard, the guests unanimously picked the wine from barrel number four as the best, and the name stuck. The Otts call it a classic, and it's the Grüner that shows the house style best. The 2025 comes from village vineyards in Feuersbrunn, Gösing and Engabrunn in the Wagram, on loess, gneiss and gravel at 220–350 metres. It was hand-picked, pressed as whole bunches and fermented with native yeasts, with each small parcel made separately before blending. Bernhard, the fourth generation of a family growing wine here since 1889, went biodynamic after a long tasting at Domaine de la Romanée-Conti with Aubert de Villaine. He took to composting so enthusiastically that the EU once contacted him, assuming his manure purchases had to be an accounting mistake. Ott reckons the 2025 will be at its best over the next 25 years, which is a long life for a Grüner, so buy enough to drink some now and hold some back.

"The 2025 Grüner Veltliner Fass 4 is a wine that has existed since 1988 and is partly what made Ott's name. It is harvested in the Hengstberg site, which straddles the regions of Kamptal and Wagram. Subtle yeast on the nose still has the verve of reduction along with that salty, herbal tang of Grüner. The palate continues with that herbal edge, bringing crushed yarrow and something slightly more peppery that smooths into the yeasty yet slender texture. Tender saltiness makes for a long finish on this smooth, slender wine." —Anne Krebiehl MW

More about Bernhard Ott

Bernhard pioneered organic and biodynamic winemaking in Austria after a trip to the Domaine Romanee Conti in Burgundy, where Aubert de Villaine was making the world’s greatest wines with biodynamics.

Upon his return to Austria he and fellow winemakers Johannes Hirsch and Fred Loimer established respekt-BIODYN, a community oriented group of biodynamic farmers committed to helping each other and the earth through biodynamics.

He even goes as far to make his own compost, a task most growers avoid, but which makes Bernhard giddy as a school boy when showing off his tarp covered piles. Composting may sound like a bunch of shit to some, but his heaping use of the stuff has enabled enough water retention that he doesn’t need to irrigate, even in these record breaking hot recent vintages.

Even though he’s been in charge of his 5th generation estate since 1993 (at the age of 21), he has never stopped experimenting, whether with vessels, stem and skin contact, farming techniques or different grapes. His ultimate goal has always been to prove that his single vineyards: Rosenberg and Spiegel were capable of producing world class, long lived wines.

Grüner Veltliner soars to new heights in his capable hands and even his first three tiers Am Berg, Fass 4 and Der Ott are some of the best values in Austria.

Tasting Profile

Expect the classic Wagram Grüner Veltliner profile: green apple, citrus and pear with the grape's signature white-pepper spice, plus a savoury, stony edge. Typically medium-bodied and crisp, with lively acidity and a dry, clean, peppery finish. Think of a more textured, spicier alternative to Sauvignon Blanc.
