Michel-Henri and Françoise Ratte have farmed biodynamically in Arbois since 1989—among the Jura's earliest adopters. "Ouillé" means topped-up: the barrels are kept full to prevent oxidation, preserving Savagnin's natural acidity and fruit purity rather than developing the nutty, oxidative character of vin jaune. Demeter-certified biodynamic, wild-yeast fermented in stainless steel, aged in old Burgundy barrels, bottled without filtering. Many parcels contain 80-100 year old vines. This is Jura Savagnin for those who want the grape's mineral essence without the funk.
