A non-vintage Pouilly-Fuissé from a named clos is a real rarity in a region that sells almost everything by the year, and it comes from a family that has never much cared what its neighbours do. Philippe Valette's father was the first farmer in the region to stop selling his grapes to the co-op and bottle his own domaine wine. When Philippe finished wine school in 1990, he converted the vineyards to organic farming. The house is also patient: depending on the cuvée and the year, wines spend anywhere from six months to five years in old oak before release. Three generations of the family have worked this 8.5-hectare estate in Chaintré, a small village at Burgundy's southern edge where the Mâcon gives way to Beaujolais. If you already know Pouilly-Fuissé as a dependable white, this is a chance to try it from a grower who treats it as something to think about.
