Pira may be Roagna's monopole, but Pajé is their crown jewel of Barbaresco. The VV designation signals "Vecchie Vigne"—old vines that the family has cultivated in this legendary cru for decades. Pajé sits in Barbaresco proper, one of the appellation's most prized vineyard sites, known for producing wines of exceptional elegance and aromatic complexity. Luca Roagna is the fifth generation in a family that's been making wine in Barbaresco since the 1850s. His Dolcetto comes from vines over 45 years old, fermented with real patience and aged in neutral oak. This is the kind of wine that makes you wonder why everyone doesn't make Dolcetto this seriously.

The parcel is Roagna's largest in Barbaresco, but is still only 1.83 hecatares.OrientationSouthwest.SoilPajé is particularly rich in calcareous marl soil with a high content of active limestone.ViticultureThe Vecchie Vigne selection is sourced from the oldest vines in his plot - over 50 years old. Average age is over 60 years old.VinificationFermentation lasts ten days in large wood casks. They ferment with a pied de cuvee made from their indigenous yeasts. They then use the technique of submerged cap -- which can last 70-90 days.AgingThe wine is then aged in large neutral French botti. The oak Luca uses is never toasted but instead made by using hot steam instead of flame. The wine is normally aged for five years in wood before release.
