One of Burgundy's earliest committed organic estates—certified since 2011 after a decade of conversion—Domaine Dujac brings genuine sustainability credentials to Côte de Nuits prestige. Jacques Seysses left banking in 1967 to found this domaine, now run by his sons Jeremy and Alec. Aux Combottes sits in a transitional zone among Grand Crus on brown limestone soils, producing Pinot Noir of elegance rather than raw power. The signature whole-bunch fermentation with indigenous yeasts delivers layered complexity. The 2023 vintage is bright, charming, and fruit-forward with silky tannins—seductive in youth yet built for aging. Expect raspberry, morello cherry, and wild blackberry with peony and rose notes. Cellar 5-10 years or decant generously now.

"From a 1.16 ha parcel. A very ripe liqueur-like nose speaks of cassis, black cherry and a plenitude of floral nuances. The succulent and punchy flavors possess slightly better density before terminating in a powerful and slightly chewy but long finale. Seysses noted that this was one of the last wines to finish its malo so it's not surprising that it is more primary and backward and my predicted range offers the benefit of the doubt that the finish will better harmonize in time." —Allen Meadows

"The 2023 Gevrey-Chambertin 1er Cru Aux Combottes finished its malolactic in September, so it's no surprise that it was one of the most inscrutable wines of the tasting. Offering up aromas of cassis and spices, it showed good fruit and underlying structure, but to say much more would be an exercise in more than usually creative writing." —William Kelley

"Mid ruby. Immediately more depth and spark than the Gruenchers with definite premier cru richness. Rich fruit, with red cherry and strawberry on the nose, deeper raspberry on the palate. Good balance between fine acidity, moderate well-knit tannins and long length."

More about Domaine Dujac

Even very casual consumers of Burgundy have likely heard of Domaine Dujac, considered one of the very best producers in Morey-Saint-Denis. This is a rather astounding fact given that the Domaine is only 50 years old, a blink in the eye given the region's winemaking history.

When Jacques Seysses purchased the estate of Marcel Graillet in 1967, it was in disrepair and had been selling fruit off in bulk for some years. In less then a decade he had invested heavily in the property and found customers for his domaine bottled wines. The Dujac name begin to be seen at top restaurants in France and beyond.

Fast forward 20 years and you have Jacques' sons, Alec and Jeremy, taking over the reigns of the now expanded Domaine, with holdings in Gevrey, Chambolle, Vosne, Nuits and Puligny. Today Jeremy and his wife Diana Snowden (herself from a prominent wine-making family in Napa) are largely responsible for the operations.

The winemaking has evolved. Jacques was famous for using 100% whole clusters and 100% new oak. Jeremy and Diana are the first to tell you that adaptation is key. The climate is changing dramatically in Burgundy, and every vintage presents new challenges. Stem use is between 20% and 100%, depending on the vintage and the vineyard. Same goes for oak use. On a visit there last spring Jeremy was excited to show us his concrete egg tanks that were aging the Puligny-Montrachets.

All of this is to say that this now storied Domaine is in very good hands as it heads into the future.
