This is Domaine Vincey's still wine - a Coteaux Champenois Blanc from Grand Cru Chardonnay grown in Oger and Le Mesnil-sur-Oger, plots planted in 1968 and 1971 to massal selection on 50-80 cm of brown clay over chalk. The cuvee's signature is the cellar work: 29 months aging in older barrels under a veil of flor ("sous voile"), a Jura-style oxidative elevage applied here to Cote des Blancs chalk fruit. The result is a still Chardonnay unlike anything else in Champagne - savory, nutty and salty, with the steel of Grand Cru chalk beneath an oxidative patina of curry leaf, almond skin and dried orchard fruit. Biodynamic farming, no added sulfur, unfined and unfiltered.
